Did you know that a batch of jam takes about 6 cups of sugar to make? That is because pectin normally requires a lot of sugar to gel. We use a calcium based pectin which allows us to cut 80% of the sugar! Yep, we only use 1 cup of sugar and 1 cup of honey per batch (about 9-10 jars) of jam.
Pro trivia - Jam is made from fruit and jelly is made from fruit juice.
